In earlier times, when fermentation was one of the main methods for the preservation of food, the intake of probiotic bacteria was high. Today the situation is different. The use of freezers, refrigerators, the pasteurisation of food like dairy products and the use of different kinds of preservatives have replaced fermentation as a method for the preservation of food. (1) The intake of probiotic bacteria, which is important for maintaining a healthy intestinal environment, has dramatically decreased. Today we have a higher pressure on the bacterial ecosystem in our body than in the earlier times, through a changed diet (rich in protein, fat and refined products like sugar and poor in fibres), stress, increased intake of medicines like antibiotics, and environmental toxins etc. The need for probiotic bacteria is thus due to the many factors in our society that can damage intestinal health and the fact that the intake of probiotic bacteria via food has decreased. A healthy intestinal milieu is crucial to our health.
